Sometimes I suspect I don’t like fall because it doesn’t really happen in Southern California. I mean, my weather app says it’s 77 degrees outside (and it feels like it’s at least that hot inside) and the forecasted highs are in the 80s through next week. So it’s really hard to get excited about boots and sweaters. And, while I (mostly) enjoy watching football, most of the time I’m making jokes about how many (stupid) rules there are in that game, making fun of Joe Buck, or laughing at Husband’s existential crises over his fantasy team (the best are when he has a lot of players on a team playing the Cowboys). I’m too busy mourning the end of baseball season to get excited about football.
That said, I can definitely get behind some fall recipes. I really shouldn’t be allowed in Trader Joe’s without supervision once their shelves get taken over by ALL THE PUMPKIN THINGS (or after, when they have all the Christmas and holiday treats). We’re always trying to get better at meal planning, so I scrolled through my Pinterest board and picked some recipes to add to the schedule over the next few months:
Baked Pumpkin Cream Cheese French Toast (Damn Delicious) // Crockpot Breakfast Casserole (Family Fresh Meals) // Pumpkin Gingerbread Waffles (In Sock Monkey Slippers) // Pumpkin Pie Smoothie (Munchkin Food)
Black Bean and Sweet Potato Chili (Serious Eats) // Pumpkin Soup (Cook the Story) // Hearty Chicken Stew with Butternut Squash & Quinoa (Cooking Canuck) // Pumpkin Black Bean Soup (Hipcooks)
Sweet Potato, Kale, and Sausage Bake with White Cheese Sauce (Pinch of Yum) // Slow Cooker Pulled Pork (Fearless Homemaker) gotta be careful with slow cooker recipes; Onyx is scared of the slow cooker for some reason and hides out back when I pull it out // Lazy Sunday Casserole (Kayotic Kitchen) // Baked Gnocchi with Bacon, Tomato, and Mozzarella (Simply Delicious)
Quick Pumpkin Beer Bread (Foxes Love Lemons) I mean, I don’t know…it’ll be really hard to bake with pumpkin beer instead of drink it // Pumpkin Swirl Brownies (Smitten Kitchen) // Pumpkin Swirl Bread (enjoy it blog) // Mini Pumpkin Pies (B. Britnell via The Grits Blog) let’s be honest, I’ll only make these if I have an excuse to share them with lots of friends. So if anyone wants to invite me to a potluck or something in the next few months, I’ll bring these
